Soft, light and delicious...&lt;br /&gt;&lt;br /&gt;&lt;/span&gt;&lt;span style="font-style: italic;font-size:85%;" &gt;1 cup margarine, softened&lt;br /&gt;1 cup light brown sugar, packed&lt;br /&gt;1 cup granulated sugar&lt;br /&gt;3 eggs&lt;br /&gt;1 cup buttermilk&lt;br /&gt;4 cups all purpose flour&lt;br /&gt;1 tsp. baking powder&lt;br /&gt;2 tsp. baking soda&lt;br /&gt;1/2 tsp. salt&lt;br /&gt;2 tsp. vanilla extract&lt;br /&gt;&lt;br /&gt;&lt;/span&gt;&lt;span style="font-size:85%;"&gt;Preheat oven to 375 degrees Fahrenheit.&lt;br /&gt;&lt;br /&gt;1.  Sift together flour, baking powder, baking soda and salt.  Set aside.&lt;br /&gt;2.  Cream margarine, sugar and brown sugar in a large mixing bowl.&lt;br /&gt;3.  Add eggs, buttermilk and vanilla extract and mix until just combined.&lt;br /&gt;4.  Add the dry ingredients in batches (about 1/3 of the dry ingredients in each batch) and stir until thoroughly combined after each addition.&lt;br /&gt;5.  Lightly grease a cookie sheet.&lt;br /&gt;6.  Drop teaspoonfuls of the dough on the prepared cookie sheet about 2 inches apart.&lt;br /&gt;7.  Bake for 8 to 10 minutes or until the cookies are set and slightly brown around the edges.&lt;br /&gt;8.  Cool cookies on cookie sheet for approximately 5 minutes and then move cookies to a cooling rack to cool completely.  Make sure that cookies are completely cooled before storing. Those of you who know me know that I absolutely love honey!!  Therefore, these cookies are some of my absolute favorites!!  They are great to enjoy with a cup of your favorite hot tea - sweetened with honey, of course...&lt;br /&gt;&lt;br /&gt;&lt;/span&gt;&lt;span style="font-style: italic;font-size:85%;" &gt;1 cup margarine, softened&lt;br /&gt;1 cup light brown sugar, packed&lt;br /&gt;2 eggs&lt;br /&gt;6 1/2 tbs. honey&lt;br /&gt;1 tsp. vanilla extract&lt;br /&gt;3 1/2 cups all purpose flour&lt;br /&gt;2 tsp. baking soda&lt;br /&gt;&lt;br /&gt;&lt;/span&gt;&lt;span style="font-size:85%;"&gt;Preheat oven to 350 degrees Fahrenheit.&lt;br /&gt;&lt;br /&gt;1.  Sift together flour and baking soda.  Set aside.&lt;br /&gt;2.  Cream margarine and brown sugar in a large mixing bowl.&lt;/span&gt;&lt;span style="font-style: italic;font-size:85%;" &gt;&lt;br /&gt;&lt;/span&gt;&lt;span style="font-size:85%;"&gt;3.  Add eggs, honey and vanilla extract and mix until just combined.&lt;br /&gt;4.  Add the dry ingredients in batches (about 1/3 of the dry ingredients in each batch) and stir until thoroughly combined after each addition.&lt;br /&gt;5.  Refrigerate dough for about two hours or until firm.&lt;br /&gt;6.  Pull off and roll dough into about 1-inch pieces and place on ungreased cookie sheet about 1 1/2 inches apart.&lt;br /&gt;7.  Bake for 10 to 15 minutes.  Cookies should be lightly golden on top.&lt;br /&gt;8.  Cool cookies on cookie sheet for approximately 5 minutes and then move cookies to cooling rack to cool completely. Cookies happen to be one my favorite things to make.  Because of this, I'm going to be posting one cookie recipe each week for at least the foreseeable future.  So, without further ado, here is the first cookie recipe...&lt;br /&gt;&lt;/span&gt;&lt;span style="font-size:85%;"&gt;&lt;br /&gt;&lt;/span&gt;&lt;span style="font-style: italic;font-size:85%;" &gt;1/4 cup        vegetable shortening&lt;/span&gt;&lt;span style="font-size:85%;"&gt;&lt;br /&gt;&lt;/span&gt;&lt;span style="font-style: italic;font-size:85%;" &gt;1/4 cup        unsalted butter, softened&lt;/span&gt;&lt;span style="font-size:85%;"&gt;&lt;br /&gt;&lt;/span&gt;&lt;span style="font-style: italic;font-size:85%;" &gt;1 cup            sugar&lt;/span&gt;&lt;span style="font-size:85%;"&gt;&lt;br /&gt;&lt;/span&gt;&lt;span style="font-style: italic;font-size:85%;" &gt;3/4 cup        buttermilk or sour milk*&lt;/span&gt;&lt;span style="font-size:85%;"&gt;&lt;br /&gt;&lt;/span&gt;&lt;span style="font-style: italic;font-size:85%;" &gt;1 tsp.            vanilla extract&lt;/span&gt;&lt;span style="font-size:85%;"&gt;&lt;br /&gt;&lt;/span&gt;&lt;span style="font-style: italic;font-size:85%;" &gt;1 3/4 cup     flour&lt;/span&gt;&lt;span style="font-size:85%;"&gt;&lt;br /&gt;&lt;/span&gt;&lt;span style="font-style: italic;font-size:85%;" &gt;1/2 tsp.        baking soda&lt;/span&gt;&lt;span style="font-size:85%;"&gt;&lt;br /&gt;&lt;/span&gt;&lt;span style="font-style: italic;font-size:85%;" &gt;1/2 tsp.        salt&lt;/span&gt;&lt;span style="font-size:85%;"&gt;&lt;br /&gt;&lt;/span&gt;&lt;span style="font-style: italic;font-size:85%;" &gt;1/2 cup        cocoa&lt;/span&gt;&lt;span style="font-size:85%;"&gt;&lt;br /&gt;&lt;br /&gt;Preheat oven to 400 degrees Fahrenheit&lt;br /&gt;&lt;br /&gt;1.   Sift together flour, baking soda, salt and cocoa.  Set aside.&lt;br /&gt;2.   Cream shortening, butter, sugar and eggs in a large mixing bowl.&lt;br /&gt;3.   Add buttermilk and vanilla extract and stir just until combined.&lt;br /&gt;4.   &lt;/span&gt;&lt;span style="font-size:85%;"&gt;Add the dry ingredients in batches (about 1/3 of the dry ingredients in each batch) and stir until thoroughly combined after each addition.&lt;br /&gt;5.   Refrigerate dough for one hour.&lt;br /&gt;6.   Lightly grease a cookie sheet.&lt;br /&gt;7.   Drop teaspoonfuls of the dough on the prepared cookie sheet about 2 inches apart.&lt;br /&gt;8.   Bake for 8 to 10 minutes.&lt;br /&gt;9.   Immediately move cookies to cooling rack.
