Recipe::Cookie - Honey Cookies

As promised, here is the second weekly installment of my cookie recipe series. Those of you who know me know that I absolutely love honey!! Therefore, these cookies are some of my absolute favorites!! They are great to enjoy with a cup of your favorite hot tea - sweetened with honey, of course...

1 cup margarine, softened
1 cup light brown sugar, packed
2 eggs
6 1/2 tbs. honey
1 tsp. vanilla extract
3 1/2 cups all purpose flour
2 tsp. baking soda

Preheat oven to 350 degrees Fahrenheit.

1. Sift together flour and baking soda. Set aside.
2. Cream margarine and brown sugar in a large mixing bowl.

3. Add eggs, honey and vanilla extract and mix until just combined.
4. Add the dry ingredients in batches (about 1/3 of the dry ingredients in each batch) and stir until thoroughly combined after each addition.
5. Refrigerate dough for about two hours or until firm.
6. Pull off and roll dough into about 1-inch pieces and place on ungreased cookie sheet about 1 1/2 inches apart.
7. Bake for 10 to 15 minutes. Cookies should be lightly golden on top.
8. Cool cookies on cookie sheet for approximately 5 minutes and then move cookies to cooling rack to cool completely. Make sure that cookies are completely cooled before storing.
