Recipe::Cookie - Sugar Cookies

Not your regular sugar cookie; these sugar cookies are more like individual cakes. Soft, light and delicious...

1 cup margarine, softened
1 cup light brown sugar, packed
1 cup granulated sugar
3 eggs
1 cup buttermilk
4 cups all purpose flour
1 tsp. baking powder
2 tsp. baking soda
1/2 tsp. salt
2 tsp. vanilla extract

Preheat oven to 375 degrees Fahrenheit.

1. Sift together flour, baking powder, baking soda and salt. Set aside.
2. Cream margarine, sugar and brown sugar in a large mixing bowl.
3. Add eggs, buttermilk and vanilla extract and mix until just combined.
4. Add the dry ingredients in batches (about 1/3 of the dry ingredients in each batch) and stir until thoroughly combined after each addition.
5. Lightly grease a cookie sheet.
6. Drop teaspoonfuls of the dough on the prepared cookie sheet about 2 inches apart.
7. Bake for 8 to 10 minutes or until the cookies are set and slightly brown around the edges.
8. Cool cookies on cookie sheet for approximately 5 minutes and then move cookies to a cooling rack to cool completely. Make sure that cookies are completely cooled before storing. Storing cookies in an airtight contained with a slice of bread or two will keep the cookies soft and moist.

Tidbits and Sips

I have decided to make a blog dedicated to two of my greatest loves in the world - food and drink. I have been cooking and baking since I was very young - and eating and drinking even longer!! This blog will be a work in progress that could include posts like recipes, food reviews, restaurant reviews, my food insights, food spotlights, etc. Even if you can't be sure of what type of posts you might find, you can rest assured that they will always have to do with food and drink. Enjoy!!
